I make lots of cheesecakes and have tried every bad pan on the market. I hate dark pans, or pans with a edge that require the cake to be dug out when plating. This is my first cheesecake pan w/o the spring and I love it. Nothing to break, or wear out.

I love these pans and I'm a very detailed person! Purchased the 6", 8" and 10" from directly from the company based on reference from a baking book that was published from the 80's! Aluminum pan bakes evenly without the tough thick crust you find in most retail pans (dark steel or aluminized steel). The edges are completely smooth (no seams). The bottom opening and removable bottom are also smooth, no sharp edges. I have used them for cheesecakes, flourless cakes, and even butter cakes. All turn out great. I also use the removable bottom discs for cake decoration and transporting. This company has been around for four generations and still makes their pans in the U.S.A.

Great pans. I have several of the Parrish brand pans. They make great cakes. I like these better than springform pans because these are easier to clean (fewer nooks and crannies for stuff to get trapped in).
